This is really a question about how Honda's voice system works with my Pixel 3 phone when connected to Android Auto but not when connected by Bluetooth. I guess what I really want to know is if others who have an Android phone are able to get the "OK Google" command to work by pressing and holding the voice command key when connected by Bluetooth.

Voice commands should work quite reliably. If they are not working for you, this is not a design failure or "just a poor voice command system", it must be a fault in your vehicles. We used to have a 2013 CT and the voice commands worked very well in that car. Also in a 2015 NX.
You are correct though, the voice commands are not easy to find. Easiest way I found was to go to the quick reference guide in the manual. Look for the voice control button on the picture of the steering wheel. Go to the page that is referenced there. Should be a whole list of voice commands. Damn manual is not very well organized, for sure.

When I try to call those voice tagged speed dial entries by pressing the voice button (on the steering wheel) & saying the voice tag name (or, alternately, saying "Call [voice tag]"), the system tells me that it found several phone book entries that are close to my request (they're really not) & lists them on the screen so I can select from them.
